WHOLE WHEAT NUT BREAD 1 egg 3/4 cup sugar 1/2 tsp. vanilla (optional) 1 cup buttermilk or yogurt 2 cups pastry flour (or 1 c. cake, 1 c. all purpose) 1 cup whole wheat flour 3/4 teaspoon baking soda 3 teaspoons baking powder 1 teaspoon salt 1 cup pecans or walnuts 1/2 cup raisins, dates, Craisins, figs, etc. (optional)
Measure raisins or other dried fruit of choice (finely chop larger fruit). Add water enough to cover. Heat in microwave for 3 minutes or until water is steaming, but not boiling. Let stand for 30 minutes until fruit is rehydrated. Discard water (or save for another use*).
Combine egg, sugar and buttermilk or yogurt. Sift dry ingredients well and add to sugar mixture. Mix well and add walnuts or pecans.
Place in well greased loaf pan and bake for 60 minutes at 375°F. Reduce heat to 325°F and/or cover top with foil if top is browning too quickly.
Cooks Note: Buttermilk powder may be used in this recipe. Use the *raisin water to reconstitute the buttermilk powder for added flavor.
