MOO SHU PORK

7 oz. pork tenderloin nonstick olive oil cooking spray 4 green onions, cut into 1/2-inch pieces 2 tbsp. hoisin sauce or Asian plum sauce 1 1/2 c. packaged cole slaw mix 4 (8-inch) fat-free flour tortillas, warmed

Thinly slice pork. Lightly spray large nonstick skillet with cooking spray. Heat over medium-high heat. Add pork and green onions. Stir-fry 2 to 3 minutes or until pork is no longer pink. Stir in hoisin or Asian plum sauce. Stir in cole slaw mix. Spoon pork mixture onto tortillas. Wrap to enclose. Serve immediately. Makes 2 servings.

Cooks Note: To warm tortillas, stack and wrap loosely in plastic wrap. Microwave on HIGH for 15 to 20 seconds or until hot and pliable.

Optional: Add ginger, garlic, sliced leeks, capsicum, to your taste.
