POACHED FISH 2 lb. fish fillets 1 qt. water 1 onion, sliced 1 bay leaf 1 tbsp. lemon juice 4 peppercorns 1 tsp. salt
In fry pan, combine all ingredients except fish. Cover and simmer 10 minutes. Carefully place fish in liquid. Cover and simmer 20 to 30 minutes depending on size of fish. If liquid doesn't cover fish, turn after 10 minutes.
