FARM BREAD 4 c. milk, scalded and cooled 4 c. oatmeal 2 tbsp. butter 1 pkg. dry yeast 1/2 c. warm water 2/3 c. molasses 1 tbsp. salt 9 1/2 c. flour, unbleached 1 egg white

Put oats and butter in milk and let stand half hour. Dissolve yeast in water for a few minutes. Combine yeast and oat mixture. Then add molasses and salt. Stir in enough flour to make dough easy to handle. Turn onto floured board and knead for five minutes. Place in greased bowl, turning greased side up. Punch down and knead ten minutes. Cover again and let rise for 45 minutes. Punch down, shape into two round loaves. Place on greased baking sheets. Cover and let rise for 45 minutes. Heat oven to 325 degrees. Brush loaves with egg white. Bake 45 minutes. Cool on wire rack.
