GRILLED FISH 2 cloves garlic, minced 2 tsp. salt 2 tsp. oregano leaves 1 tsp. basil leaves 1 tsp. thyme leaves 1/4 tsp. pepper 1 cup corn oil 1/2 cup chopped onion 3 tbsp. grated lemon rind (2 lemons) 1/3 cup lemon juice
1 whole fish (4 to 5-pounds), dressed, head and back fin removed Mix garlic, salt, oregano, basil, thyme and pepper. Stir in corn oil, onion, lemon rind and juice. Pour half of marinade in large baking dish. Lay fish in marinade. Spoon some marinade into fish cavity and pour remaining over fish. Marinate at least 3 hours (in refrigerator), turning and basting frequently. Remove fish from marinade. Strain and save liquid. Place onions and garlic in cavity. Close cavity with needle and string or skewers. Place fish on wire rack on grill, about 3-inches from heat. Grill about 30 minutes on each side or until fish flakes easily with fork. Baste occasionally.
Makes 6 servings.
