Ratatouille

Rich tomato sauce with soft aubergine, courgette and peppers - this delicious vegetarian dish will keep you coming back for more!
Ingredients: • 2 aubergines, slice into 1½cm slices • Salt for sweating aubergines • 2tbsp olive oil • 1 onion, sliced • 2 green peppers and 2 red peppers, sliced into thin strips and diced • 2 cloves garlic, crushed • dried chilli flakes (optional) • 8 courgettes, cut in half lengthways and sliced • 1tbsp fresh parsley, chopped, 1tbsp fresh basil • 2 tins peeled tomatoes, chopped • 1tbsp Illovo Brown Sugar • 40g Parmesan cheese, grated
Method: 1. Place the aubergine slices in a colander and sprinkle liberally with salt. Leave to sweat for about 20 minutes until beads of water appear on the slices. Pat dry with a paper towel. Dice the aubergines into 1½cm cubes. 2. Fry the onions for about 2 minutes and then add the aubergines. Add more oil if needed. Add the peppers, garlic and courgettes and fry for about 5 minutes, stirring occasionally. 3. Add the parsley, basil, chilli flakes, tomatoes and sugar and leave to simmer for about 30 minutes until the vegetables are softened. Sprinkle with freshly grated Parmesan cheese.
Optional: Serve with a swirl of cream and a drizzle of basil pesto. Add canned beans or cooked pasta to the dish to make a substantial meal, perfect for cooler weather.
