PASTA PARMESAN 1 lb. pasta, cooked according to package directions 3 tablespoons butter 2 or 3 cloves garlic, minced 1/3 cup freshly grated Parmesan cheese 1/2 cup heavy cream sea salt, to taste freshly ground black pepper, to taste 3 tablespoons fresh parsley, minced

This recipe is improved if fresh pasta is used. A simple, quick and economical weekday side dish. In a saucepan, melt butter and saute the minced garlic over low heat for 5 minutes, but do not brown. Add remaining ingredients and heat over medium heat until heated through. Add hot pasta and serve.

Cooks Note: Use only fresh parsley, which may be omitted if not available. Do not substitute dried parsley in this recipe.

Variation: Top may be sprinkled with toasted buttered bread crumbs and paprika before serving for extra texture and color.
