CITRUS MARINATED CHICKEN

CITRUS MARINATED CHICKEN 1/4 c. lemon juice 2 tbsp.soy sauce 1/3 c. water Dash pepper 4 cloves garlic, crushed or pureed 1 tsp. grated orange peel 2 whole bone-in chicken breasts, halved, skin removed 4 slices orange Freshly chopped Italian parsley
In 2 cup measure combine lemon juice, soy sauce, water, pepper, garlic and orange peel to make marinade. Microwave at High 1 to 2 minutes, or until hot. Allow to cool and infuse for at least 10 minutes. Place cooled oil with chicken in plastic bag. Refrigerate for at least 1 to 2 hours.
To cook in microwave, arrange chicken in a 12x8-inch baking dish with meatiest portions to outside. Top with orange slices. Pour marinade over chicken. If grilling, brush or spray grill with olive oil and preheat to 350°F.
Microwave Instructions: Cover with wax paper. Microwave at High 13 to 18 minutes, or until meat is tender and no longer pink, rearranging and basting twice.
Grilling Instructions: Grill chicken breasts for 5-7 minutes on each side or until meat is tender and no longer pink. Chicken is best grilled over indirect heat with white-hot coals.
Chicken breast is done when internal temperature reads 160°F on meat thermometer.
