FRENCH DRESSING 1 cup light or extra virgin olive oil 1/4 cup cider vinegar 1/4 cup lemon juice 1 tsp. salt (or, to taste) 1/4 tsp. black pepper 1/2 tsp. paprika 1/2 tsp. dry mustard *seasonings
Your vinaigrette will be what you make it, so use only high quality organic vinegar made from real apples for the best flavor. There is great variety among olive oils; Italian extra virgin olive oil is generally the best (avoid most Spanish or Greek brands found at the supermarket). Put ingredients into jar with a tight top. Shake very thoroughly or mix in blender.
To make Bleu Cheese, put a package of Roquefort cheese in a blender or mixer; add enough of this French dressing to cover and blend until smooth. Or add tomato puree for a different dressing.
*This vinaigrette may be seasoned with garlic, shallots, and herbs such as red or black pepper, thyme, oregano, basil, lemon peel or other citrus zest, mint, scallions, etc.
