CAJUN SMOTHERED POTATOES potatoes (Yukon Gold or yellow) Cajun spice salt pepper green onions butter ham or chicken Cheddar cheese

Precook 6 potatoes in microwave until slightly tender. When cooked, cut into wedges. Place wedges on baking sheet. Sprinkle Cajun spice, salt and pepper, to taste on top of potatoes.

Melt 125ml (approximately 1/2 cup) of butter in microwave and drizzle on top of potatoes.

Cook at 375°F for 30 minutes or until they start to brown. Pull out and put pieces of precooked ham or diced chicken on the potatoes and smother with grated Cheddar cheese. Return to oven for 10 minutes or until meat is hot and Cheddar is melted. Top with green onions!

VOILA!! A dinner that is quick, easy and cheap.
