Gourmet Jalapeño Popper Sandwich

We all love chili poppers, don’t we? So when we saw Bertus Basson’s Smoked Garlic and Jalapeño pickle that he made for Chaloner, the first thing we thought of was to make a gourmet jalapeño popper sandwich.
Ingredients: – 1 tablespoons Chaloner Smoked Garlic and Jalapeño Pickle – 2 slices ciabatta bread – 1 tablespoon butter, at room temperature – 2 tablespoons cream cheese, at room temperature – ¼ cup mature cheddar cheese, grated – A sprinkling of Cajun spice mix
Method: 1. Spread one side of each slice of ciabatta with the butter. Place these butter side down on a cutting board. 2. Spread a thick layer of the cream cheese on the non-buttered side of each slice and then spread the Chaloner Smoked Garlic and Jalapeño Pickle over the cream cheese on one slice of bread. 3. Top the pickle with the grated cheddar and a sprinkling of the Cajun spice mix. Gentle place the loaded piece of ciabatta, butter side down onto a medium to hot griddle pan. Place the second slice of ciabatta butter side up on top of the loaded slice. 4. Grill for about 3-4 minutes on each side until the ciabatta is golden and the cheese melted.
