ORANGE RAISIN CAKE 4 cups all-purpose flour 2 teaspoons baking soda 1 teaspoon ground ginger 1 teaspoon ground coriander 1 teaspoon salt 1½ cups butter 2 cups packed light brown sugar 6 eggs 2 cups orange marmalade 2 teaspoons orange extract 1/2 cup buttermilk or sour milk 2 cups golden raisins (soaked in warm water) 1 cup chopped nuts
Preheat oven to 350°F. Stir together flour, soda, spices and salt. Beat together butter add sugar until creamy and continue beating as you add eggs, one at a time. Stir in orange marmalade and orange extract (or liqueur).
Add flour alternately with buttermilk, beginning and ending with flour. Stir in raisins and nuts. Pour into 2 greased and floured 12-inch round cake pans.
Bake in preheated 350°F oven about 50 minutes or until cake tests done. This cake is better if allowed to age a few days.
Makes two 12-inch round cake pans.
