Grondboontjie Koekies

ongeveer 48 koekies

250 g (½ blok) botter 250 ml (1 k) witsuiker 250 ml (1 k) bruinsuiker 250 ml (1 k) grondboontjiebotter 2 eiers 625 ml (2½ k) koekmeel 5 ml (1 t) bakpoeier knypie sout 7,5 ml (1½ t) koeksoda

Stel oond op 180 °C.

1. Room botter en suikers tot romerig. 2. Voeg grondboontjiebotter en eiers by en klits tot goed gemeng. 3. Sif meel, bakpoeier, sout en koeksoda en roer by bottermengsel. 4. Plaas deeg in yskas vir 1 uur. 5. Rol in balletjies en plaas op bakplaat wat met bakpapier gevoer is. 6. Maak elke balletjie met vurk bietjie plat.

**Bak vir 10 min. of tot ligbruin. Moenie te lank bak nie. ♫
