NO-CRUST MINI QUICHES

CUSTARD
250ml cream
3 eggs
pinch salt
pinch pepper
10g italian parsley, chopped
VEGETARIAN OPTION
1 cup white mature cheddar cheese, grated
250g Melissa's Sundried Tomato, Feta and Bell Peppers, drained
400g baby marrows, grated
OR
MEAT OPTION
1 cup white mature cheddar cheese, grated
500g bacon, chopped and fried until crispy (Drain on kitchen towel)
300g Melissa's Golden Onion Marmalade
METHOD
Mix custard ingredients together.
Mix Vegetarian or Meat ingredients together and spoon into muffin tin, makes 8.
Top with custard.
Sprinkle with grated cheese.
Bake at 180°C for 20 minutes or until set.
Set aside to cool, before removing from tin.
