PAPRIKA CHICKEN WITH SPINACH

4 skin on chicken thighs smoked paprika my house seasoning (equal parts garlic powder, onion powder and pepper...combine and store in an airtight container) 3 T. butter 1 T. olive oil 1 small onion, chopped 1 T. minced garlic 6 oz. fresh baby spinach 1 1/4 - 1 1/2 C. half and half
Generously season the chicken with the paprika and house seasoning, set aside. Heat the butter and oil in an oven proof skillet over med. high heat. Brown the chicken, starting skin side down, about 5-6 minutes per side. Remove the chicken to a plate and reduce the heat to medium. Add the onion and cook for 2-3 minutes then add in the garlic and cook till fragrant. Add 1 C. of half and half to the pan while stirring and scraping up any bits from the bottom of the pan with a wooden spoon.
Preheat the oven to 350 degrees. Add the chicken back to the pan and cook for 1-2 minutes, turning the chicken in the sauce. Stir in 1/4 C. more of the half and half and spread the spinach around the pan, tossing to coat in the sauce. Place in the oven and bake for 15-20 minutes or until the inside temperature of the chicken reads 160 degrees. If the sauce becomes too thick, stir in a little more cream as it is in the oven. Serve over hot rice.
