Tagliatelle with roast tomatoes and sausage

Serves 4 • preparation time: 15 min • cooking time: 50-60 min
250 g cherry tomatoes, halved salt and freshly ground black pepper olive oil 30 ml (2 T) butter 1 large onion, thinly sliced 30 ml (2 T) soft brown sugar 30 ml (2 T) balsamic vinegar 200 g knackwurst, diced a few basil leaves 1 packet tagliatelle, cooked according to the packet instructions extra basil to garnish
Preheat the oven to 180 °C 1 Place the tomato halves cut side up on a baking sheet. Season with salt and pepper and drizzle with olive oil. Roast the tomatoes for about 30 minutes and set aside. 2 Heat the butter in a pan and fry the onion until soft and fragrant. Add the soft brown sugar and balsamic vinegar, season with salt and black pepper and fry for a few minutes. 3 Reduce the heat and simmer for about 20-30 minutes over very low heat. 4 Add the sausage, basil and tomatoes to the onion marmalade and season with salt and pepper if necessary. 5 Serve with the pasta and garnish with extra basil.
