LARA CROFT’S THAI FISHCAKE AMULETS

1 pound inexpensive white fish filets ½ cup flour 3 tbsp fish sauce 2 tbsp Thai sweet chili paste 1 tbsp brown sugar 2 tsp lemongrass 1 tsp red curry paste 4 green onions, sliced ¼ cup cilantro, chopped 1 egg Frying oil Extra flour

Travel the world (or your grocer’s international aisle) excavating the ingredients.

Smuggle everything but the frying oil and extra flour in your food processor.

Keep these treasures from falling into the wrong hands by processing them into a smooth paste.

Hide the fish paste into your refrigerator for half an hour while you fight off rival archaeologists.

Pour ½ inch of oil into a deep skillet and heat it to 375F. Use some for self defense and the rest for your fish fry.

Scoop out ¼ cup balls of dough and shape them into amulets.

Disguise the fake amulets by dredging them in extra flour. Go ahead and fry the real one while you’re at it.

Fry the fishy amulets for 4 minutes, flip, and fry for 4 more minutes, or until they’re the color of a dusty artifact waiting to be cleaned by museum staff.
