THE DOCTOR’S YORKSHIRE PUDDING

1 cup flour 1 cup milk 4 eggs 1/2 tsp salt 3/4 cup (12 tbsp) melted butter or roast beef drippings

Mix the flour, milk, eggs, and salt into a thick batter. Let it sit at room temperature for about an hour.

Preheat your oven to 425F.

Put a 12 cup cupcake pan in the oven so it gets nice and hot.

Now work fast. Put one tbsp butter or beef drippings in each cup. Fill the cups with batter. Pop the whole thing back in the oven.

Don’t open the oven door for 25 minutes or it will fall like a souffle. Leave them alone and the puddings will rise up and become fluffy, light, and crisp.

These are best served with a hearty English roast in the company of Winston Churchill, after a good night’s performance with William Shakespeare, or in your companion’s living room while trying to impress her husband.
