BISTRO ONION SOUP 4 lg. white onions, about 1 1/2-2 lb. 4 tbsp. butter 2 tbsp. flour 3 (13 3/4 oz.) cans beef broth 1/2 tsp. salt 1/2 c. dry white wine 1/2 tsp. pepper 8 1/2" slices French bread, toasted 8 slices Swiss cheese
Saute onions in butter in a heavy 4 quart saucepan over medium heat, stirring often until golden, about 20-30 minutes. Stir in flour; cook 1 minute. Add beef broth, wine, salt and pepper. Heat to boiling, reduce heat and simmer partially covered for 30 minutes. Spoon into oven proof bowls, place toasted bread and cheese on top and heat in broiler until bubbly brown.
