OVERNIGHT MERINGUE NEST 6 egg whites 1/2 tsp. cream of tartar 1 1/4 c. sugar 1/4 c. finely chopped walnuts, if desired
Heat oven to 400 degrees. Line 2 cookie sheets with parchment or brown paper. In large bowl at high speed beat egg whites and cream of tartar until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, beating until stiff and glossy.
Spoon meringue into 12 mounds on paper-lined cookie sheets, 4 inches apart. With back of spoon, shape into nest. Sprinkle with nuts if desired.
Place in oven. TURN OVEN OFF. Do Not open oven door. Let stand in oven 8 hours or overnight.
To serve place in individual plates and fill with ice cream topped with favorite sauce.
TIPS FOR SUCCESSFUL MERINGUES:
1. Beaters and bowls MUST be free and clean of any grease.
2. Separate egg whites carefully not to get any yellow part.
3. Add sugar gradually.
4. Bake on paper lined sheets.
5. Wrap carefully in foil or place in tightly covered container to store.
6. Fill "JUST" before serving.
7. Humid weather will adversely affect meringue performance.
