SCAMPI AL FRESCO 1 lb. raw shrimp, cleaned & shelled 2 tbsp. olive oil 2 tbsp. butter 3 tbsp. fresh parsley 2 cloves garlic, minced 1/2 tsp. dried mint or 1 tsp. fresh Salt & pepper Juice of 1 lemon
Heat oil and butter in skillet. When oil is hot, add shrimp and cook quickly over high heat, just until shrimp turns light pink. Add remaining ingredients, except lemon juice. When garlic begins to brown, add lemon juice and remove from fire. Don't overcook. NOTE: I think I would add the garlic with the shrimp. When everything else is added the garlic should be done and the shrimp will be toughened by over cooking. The mint flavor is surprisingly good.
