MOUNTAIN MAN BREAKFAST 2 lbs. hot pork sausage – (any pork sausage can work) 2 lbs. bacon – (some use maple syrup sugar cured bacon) 2 ½ lbs. hash browns – (2-3 lbs. depending on number of people and size of Dutch oven) 2 pkgs. Mexican 4 cheese blend 1 cup diced onions 1-2 dozen eggs (2 per person) mushrooms (fresh or canned) salsa 1 cup diced green peppers
1. Brown bacon in Dutch Oven; remove bacon and pour off grease. Bacon can be browned in the Dutch oven lid turned upside down on a trivet to save time, if desired.) 2. Brown pork sausage and onion in Dutch oven.
3. Add bacon and hash browns. (Optional: green peppers)
4. Stir frequently until hash browns have browned. Add Mushrooms.
5. Remove from pit; smooth top of hash browns and make pockets for eggs with a serving spoon. Crack an egg into each pocket and cover with lid. Cover lid with hot coals.
6. When eggs are poached, sprinkle the cheese blend over the top. Cover until cheese is melted, then serve.
7. Salsa is optional and may be served at the table to be added by each person.
NOTES: We have already done 3 layers of eggs in a #12 Dutch oven by not digging deep when serving, then repeating steps 5 and 6. You could scramble the eggs and pour them over the top of the hash browns instead of poaching them to save a step.
