CHEESY SHRIMP CANAPE'S 10 slices white bread 2 tbsp. butter 1/2 tsp. thyme leaves 1/2 (8 oz.) pkg. shrimp (either frozen or fresh: cooked, deveined & chopped) 1/2 c. shredded Swiss cheese (about 2 oz.) 1/3 c. mayonnaise 1/2 c. fresh bread crumbs 1/4 tsp. salt Fresh dill for garnish, if desired
About 40 minutes before serving: Using 2 inch round, fluted cookie cutter, cut 2 circles from each bread slice (reserve scraps for bread crumbs) and place on a cookie sheet. Melt butter with thyme on low heat. With a pastry brush, coat bread circles with butter mixture. Bake in 400 degree oven until circles are golden brown. Meanwhile, combine shrimp with remaining ingredients. Shape mixture into 20 balls. Lightly press shrimp balls onto toasted bread circles. Broil until hot and bubbly (approximately 10 minutes).
You can also prepare ahead of time and store in covered container in refrigerator, then broil as directed above. Blend bread scraps in blender, leftover bread crumbs can be stored in refrigerator up to 1 week.
