LEMONY STUFFED FISH

LEMONY STUFFED FISH 2 fillets of fish, scrod or haddock 1/3 c. butter 1/3 c. celery 2 tbsp. chopped onion 1 c. seasoned stuffing mix 1 tbsp. chopped parsley 1 tbsp. lemon juice 1/4 tsp. salt 1/4 tsp. pepper

Melt butter over medium heat. Add celery and onion. Saute until tender. Stir in stuffing mix, parsley, lemon juice, salt, and pepper. Set aside. Cut each fillet in half and place half in ungreased baking dish. Top with stuffing mix. Put remaining fillets on top. Melt 1/3 cup butter. Add one good dash of garlic powder to butter. Pour garlic butter over fish. Bake at 350 degrees for 30 minutes or until fish is flaky. Spoon sauce over fish. Return to oven for 5 minutes.
