CHERRY CHOCOLATES 2 c. sugar 2 tbsp. light corn syrup 1/8 tsp. salt 1 tsp. vanilla Maraschino cherries, drained for 2 hours 3/4 c. water 2 tbsp. butter
Mix all ingredients except vanilla and cherries; cook over low heat, stirring constantly, until mixture boils. Cook to 238 degrees or soft ball stage. Clean sides of pan occasionally with damp cloth. Pour into chilled bowl; coat until hand can be held on bottom of bowl. Add vanilla; beat at high speed with electric beater until creamy, knead until smooth. Take small portion of candy in fingers; put in palm. Place cherry or candy. Place on cookie sheet; freeze until ready to dip.
CHOCOLATE DIPPING: 1 bar semi sweet chocolate 1 bar German sweet chocolate 1/2 bar paraffin
Melt ingredients in top of double boiler over hot, not boiling water. Remove from heat but leave over hot water. Dip frozen covered cherries into chocolate with fork. Place in tight container in cool place to ripen for at least 2 weeks.
