COFFEE ANGEL CUPCAKES 2 tbsp. instant coffee 1 1/3 c. water 1 pkg. angel food cake mix

Dissolve instant coffee in water in large mixing bowl. Add cake mix and prepare as directed on package. Spoon into paper baking cups, set in muffin pans or on baking sheets. Bake at 375 degrees for 15-20 minutes or until tops spring back when lightly pressed. Remove from pans and cool on rack. Frost if desired. Makes about 3 dozen.
