COCONUT SOUR CREAM CUPCAKES 1 c. sugar 1 c. sour cream 1 egg 2 c. flour 1/2 tsp. soda 1 tsp. vanilla 1/2 tsp. salt 1/2 c. shredded coconut 2 tsp. baking powder

Mix sugar, sour cream, and egg; beat for 1 minute. Sift together flour, soda, salt, and baking powder and add to cream mixture. Add vanilla; beat for 2 minutes. Stir in coconut. Pour into paper cupcake wrappers. Bake at 400 degrees for 20-25 minutes. Very good.
