4 cup flour 4 tablespoon Klim milk powder 1 teaspoon salt 2 cup boiling hot water 1 & 1/2 teaspoon butter or margarine 4 tablespoon oil
Mix salt, flour & klim in a bowl. In a microwave safe bowl put 2 cups of very hot water from a kettle that has just boiled, add 2 tablespoon oil & the butter. Put in microwave for 1min & 30sec. Remove from microwave, allow all bubbles to stop then put in 2 cups of flour mixture and stir well. Place back in microwave on power level 40% for 1min & 10sec. (Remove from microwave & stir after every 15sec.). Put warm dough into large bowl with the 2 cups flour. Knead flour into warm dough till all flour is incorporated & then add remaining 2 tablespoon oil & knead to make a smooth soft dough. I knead for about 7min. I make small golf ball size balls then cover the bowl with towel & let dough rest for 30min. I heat tawa on medium high heat. I cover my wooden rolling board with foil as this uses less flour to roll. I use 2 pinches of flour to roll. I fry rotis with no oil or butter. Fry few sec on side 1, a little longer on side 2 till brown spots appear & flip back to side1 & press edges till it puffs. I place rotis in a biscuit barrel & cover roti with a paper towel & container lid to keep rotis soft. These rotis are super soft and do not need to be heated up. Enjoy.
