MAITRE D'HOTEL BUTTER 1 stick butter 1 tablespoon chopped fresh parsley 1 tablespoon freshly squeezed lemon juice a pinch of white pepper

In a mixer with the paddle attachment, beat butter at low speed until it is light and smooth. Add all ingredients and beat to combine well. Roll up the butter into a log shape using waxed paper or plastic wrap and refrigerate until firm.

Cut slices 1/4 inch thick and serve over freshly grilled steaks or chops just before serving.

Variations: Pureed garlic, grated Parmesan cheese, or pureed shrimp or anchovies may be added for flavor variations appropriate with many simple dishes. Garlic, Parmesan and anchovies go particularly well on pasta dishes with grilled meats as an accompaniment. Shrimp butter is excellent with rice.
