MASON JAR SALAD - MARINATED POPPY SEED STRAWBERRY organic raw spinach 1/2 cup strawberries 1/8 purple onion 1/4 cup pecans (or walnuts if you prefer) 1/8 cup feta cheese (1-2 tbs) balsamic vinegar 1 tablespoon olive oil 1 teaspoon agave nectar 1 pinch of poppy seeds needed: 2 mason jars
Quarter strawberries and remove the stem. If the strawberries are large, cut them in eighths. Using a sharp knife or peeler, shave thin slices of purple onion.
In a bowl, combine strawberry pieces, shaved purple onion, poppy seeds, balsamic vinegar, olive oil, and agave nectar. Stir. Scoop marinated strawberries into the bottom of the mason jars distributing the strawberry mixture and remaining dressing evenly between your mason jars.
Sprinkle layer of feta cheese over marinated strawberries. Sprinkle layer of pecans or walnuts over feta. Fill remaining space with spinach. Seal the jar tightly.
This salad is best served after sitting for one day.
Optional: Add diced baked chicken for more protein.
