Roasted Pumpkin

Ingredients:
pumpkin of your choice, washed and sliced into wedges with the skin on
50 gr. fresh coconut, shaved
nuts of your choice
fresh rosemary
olive oil
sea salt and black pepper
Method:
Pack the pumpkin wedges in a baking dish.
Drizzle with olive oil.
Top with the shaved coconut, rosemary and nuts.
Season with sea salt and black pepper.
Roast in the oven until golden brown and cooked.
