Spicy Mutton Curry with bursting potatoes

1. Fry 1 onion with cinnamon sticks, bayleaves and a teaspoon of soomph. 2. Add 2 grated tomatoes, curry leaves, ginger&garlic, tumeric pwd, garam masala, jeera and dhania pwd and chillie pwd...let all braise in oil for a minute. 3. Add your chopped and washed meat in and stir through..do not add water. 4. Add salt to taste and let it cook for 10mins. 5. Add 2 cups of water and let it cook for a further 30mins (I'm using B-grade meat). 6. Add potatoes and cook til soft, turn off the heat and garnish with chopped coriander. I do not mix the curry after potatoes have started to cook.

7. I served mine up with rice and beetroot salad.
