This is an old recipe that was a favorite amongst my Mother’s friends. It is not so common now to see gelatin salads but they make a cool addition to a warm summer meal. With the fruit and lemonade in this it is sometimes mistaken for a dessert but it is usually served with other salads as part of the entrée.
2 envelopes unflavored Gelatin 1 cup Water 1 6-ounce tin Lemonade 1 14-ounce tin Fruit Salad (reserve syrup) 1 cup Miracle Whip (*other mayonnaise can be used)
Sprinkle gelatin on the water in a saucepan. Stir constantly over low heat about 3 minutes to dissolve gelatin. Add unthawed lemonade. Stir until melted. Gradually blend in fruit cocktail syrup into mayonnaise then blend in lemonade mixture. Chill until mixture mounds when dropped from a spoon. (about 25 minutes in a freezer). Fold in fruit and turn into a 6-cup mold. Chill until firm. Unmold before serving.
