ORANGE CHOCOLATE MOUSSE 1 c. (6 oz.) semi-sweet chocolate chips 2 lg. egg yolks, beaten 2 tbsp. frozen orange juice concentrate, thawed 2 lg. egg whites Dash of salt 3 tbsp. sugar 3/4 c. whipping cream Shaved or grated semi-sweet or milk chocolate
Melt chocolate chips over very low heat. Transfer to a medium bowl. Stir in egg yolks and orange juice concentrate. Beat egg whites and salt in a small bowl with electric mixer until soft peaks form when beaters are lifted. Gradually beat in sugar. Beat until stiff peaks form. Beat cream in a small bowl with electric mixer until stiff peaks form. Fold egg whites and 1 cup of the whipped cream into the chocolate mixture until no white streaks remain. Spoon into dessert dishes. Chill at least 1 hour. Garnish with remaining whipped cream and shaved chocolate. Store in the refrigerator. Makes 4 (about 2/3 cup) servings.
Do not use eggs with cracked or dirty shells.
HEAVENLY HOT FUDGE SAUCE 2 c. semi-sweet or milk chocolate chips 1/2 c. half and half 1/2 tsp. vanilla extract Additional half and half Melt chocolate chips in 1/2 cup half and half over very low heat, stirring frequently. Remove from heat. Stir in vanilla. Thin with additional half and half if desired. Serve warm over ice cream or pound cake. Refrigerate leftovers. Makes 1 1/2 cups.
