Romanian grilled minced meat rolls

Ingredients 500 gram minced beef 2 tablespoons beef stock (store-bought or make your own) 1/2 teaspoon juniper 1/2 teaspoon caraway seeds (or use fennel seeds instead) 1 tablespoon baking soda 2 garlic cloves vegetable or any other neutral oil pepper and salt to taste

Kitchen equipment needed cutting board & chef’s knife mortar and pestle or use ground spices large bowl barbecue or grill large plate

Preparation Get your mortar and pestle and GRIND the caraway seeds and juniper, or skip this step if you already bought ground spices. PEEL and finely chop the garlic cloves. COMBINE minced meat, chopped garlic, ground spices, beef stock and baking soda with your hands. Season with pepper and salt and set aside. You can cook them right away or wait a few hours so the flavors will enhance.

Cooking the Romanian grilled minced meat rolls HEAT up your grill or barbecue. Meanwhile use your hands to form the minced beef mixture into the desired shape. COAT with oil and grill on each side for about 2 to 3 minutes. Serve with a simple tomato sauce if you like, but we think they’re flavorful enough to eat them without sauce.
