SMOKED BUFFALO BURGERS

1 pound burger (I use buffalo but any ground meat will work) 1 egg 6 fine crushed crackers all season to taste 1 can mushroom pieces

1 baked egg per burger

slices swiss cheese - 1 slice per burger

slices cheddar cheese - 1 slice per burger

ketchup

Mix all together and form into patties, smoke in cold smoker for 20 to 30 minutes. I use mesquite wood chips but hickory works well also. Reduce cooking time by about 20% and grill or fry as usual.

Assemble the burger:

Slice the buns in half.

Top the bottom half of the bun with a slice of swiss cheese

Top with french fries

Top with the patty

Top with the slice of cheddar cheese

Top with the fried egg

Splash with ketchup
