BUTTERMILK PANCAKES WITH A BERRY ON A STICK

1 cup all-purpose flour 1 tablespoon sugar 1/2 teaspoon baking soda 1/4 teaspoon salt 2 tablespoons butter, melted 1/2 teaspoon almond, vanilla, orange or lemon extract non-stick spray 1 cup buttermilk 1 egg
In a medium bowl, mix together dry ingredients. Whisk together eggs, buttermilk, and butter and vanilla; stir into dry ingredients, mixing well.
Spray with non-stick spray or brush with oil a skillet or griddle. Heat over medium heat until a drop of water "dances" when dropped on the hot surface.
For each pancake, pour about 1 teaspoon of batter onto the well-greased skillet. When the edges of the pancakes develop tiny holes and large holes begin to form on the top center, flip the pancakes, then cook for one or two minutes more, or until the centers are cooked through.
Skewer 3 pancakes on a bamboo stick with a berry per stick and serve on a Chinese spoon.
