BAKED PARMESAN MACARONI 3 tbsp. butter 3 tbsp. all-purpose flour 3 c. milk, preheated 1/2 tsp. salt Dash of Tabasco sauce 2 c. elbow macaroni 1 c. grated Parmesan cheese 1/4 c. grated Romano cheese 8 oz. mozzarella cheese, shredded Preparation: 15 minutes. Bake 45 minutes. Serves 6.
1. Heat butter in saucepan until melted; stir in the flour until smooth. Cook, stirring, over low heat until the flour is cooked, about 3 minutes. Gradually stir in the hot milk until smooth. Cook, stirring constantly, until mixture boils and is thickened. Cook, stirring frequently over low heat, 10 minutes. Stir in salt and Tabasco sauce.
2. Meanwhile, cook the macaroni in plenty of boiling salted water until al dente, or firm to the bite, about 8 minutes, drain.
3. Combine the white sauce, cooked elbow macaroni, Parmesan and Romano until blended. Pour into a buttered 9 x 13 inch baking dish. Sprinkle the top with shredded mozzarella.
4. Bake in a preheated 350 degrees until top is browned and bubbly, about 45 minutes.
