Breakfast Squares

You need:

puff pastry, thawed and cut into rectangles of 5x7 cm each.

grated cheddar cheese

eggs

chopped chives

sea salt and black pepper

Method:

Layer a baking tray with parchment paper.

Layer the puff pastry rectangles in a single layer with gaps between them on the parchment paper.

Top the rectangles with cheddar cheese.

Bake in a pre heated oven at 180 degrees until golden and puffed.

Press a hollow with a spoon in each pastry rectangle.

Break an egg carefully in each hollow.

Season with sea salt and black pepper.

Bake until the white is done and the yolk is still runny.

Serve with fried tomatoes.
