Buttoad's Banana Oatmeal Pancakes

You can be certain the pancake lily pads from the Breakfast Bog were never this healthy, and they were surely never this tasty! The oats are a great source of fiber-rich whole grains and the banana and strawberries are rich in vitamins that help kids grow up healthy and strong. The addition of flaxseeds, rich in omega-3 fatty acids, may ward off type 2 diabetes later in life.
Ingredients: 2 eggs, whisked 1/2 cup rolled or quick oats 1 banana, sliced 1/2 tsp cinnamon 1 T flaxseed Sliced strawberries to taste Maple syrup to taste
Directions: In a bowl, combine eggs, oats, banana, cinnamon and flaxseed.
Using a hand mixer, blend until mixture forms a batter-like consistency
Pour the batter onto a preheated, greased skillet and cook until pancakes are golden brown.
Top finished pancakes with a drizzle of maple syrup and sliced strawberries.
