HOMEMADE CHOCOLATE ICE CREAM 3 c. evaporated milk 1/8-1/4 tsp. salt 6 eggs 2 tsp. vanilla 5 c. whole milk 2 c. sugar 4 oz. unsweetened chocolate or equiv. of 1/4 c. butter & 3/4 c. cocoa
Scald whole milk. Melt chocolate, add to hot milk and stir until well mixed. Combine sugar, eggs and salt; beat until light. Pour milk onto sugar mixture blending with whisk. Using 1/2 of mixture at a time (or if you have a 6 quart double boiler you may use all), heat over double boiler until mixture coats spoon. Cool, stir in vanilla. Pour into ice cream maker and follow ice cream maker directions. This is absolutely wonderful ice cream!
