1 tablespoon light rum 1 8 oz. can coconut cream ,such as coco lopes 2/3 cup pineapple juice
2 pineapples, flesh scooped out
fresh fruit pieces for garnish
In a blender, combine rum and coconut cream. Blend for 30 seconds. Stop and pour in pineapple juice. Blend for 14 seconds. Serve in hollowed out half pineapples. Garnish with fresh fruit.
Serves 6 (1/4 cup servings)
