STEWED TOMATO SALAD 1 1/2 cup stewed canned tomatoes or fresh red-ripe 2 tbsp. balsamic vinegar 1/4 tsp. sea salt 1/2 tsp. basil, dried or 1 tbsp. fresh 3 cloves garlic 1 tbsp. extra virgin olive oil
In a saucepan, sauté minced garlic and red onion in olive oil until translucent. Add 1 can (about 1 1/2 cups) canned stewed tomatoes and fresh or dried basil. Heat for about 5 minutes; let cool about 20 minutes before serving. Stir in balsamic vinegar and serve; season to taste.
