Swallow Falls Healthy Mac and Cheese

Nix boxed mac and cheese made with artificially flavored orange powder and opt for something more satisfying and healthy instead. This recipe gets its flavor and coloring by combining vitamin C-packed squash puree and calcium-rich cheese. Add in grated carrots, frozen peas, and cauliflower for undetected added nutrients- your kids will never even notice the healthy add-ins.

Ingredients: 3 tbsp olive oil 3 tbsp flour 12 oz can evaporated milk 1/2 cup yellow squash puree 1 tsp salt 1/2 cup cheese 3 cups macaroni noodles

Directions: 1. In saucepan, stir olive oil and flour constantly till thickens. 2. Stir milk, squash, salt and cheese over medium heat until sauce thickens. 3. In the meantime cook macaroni noodles. Combine. 4. Let sit for 5 minutes to thicken up.
