Set up a taco bar in your kitchen, play festive music and let the kids fill their tortillas with their choice of healthy toppings. Keep calories in check by serving Greek yogurt in lieu of sour cream, and whole wheat tortilla instead of salty taco shells. Keep cleanup to a minimum by using a shredded store-bought rotisserie chicken as a protein-rich filling. Simple and delicious -- olé!
Ingredients: 1 store-bought rotisserie chicken 2 cups salsa 8 whole-wheat soft taco tortillas 1 cup grated, low-fat cheddar cheese 1/2 cup plain, low-fat Greek yogurt 1 avocado, chopped 1 cup shredded romaine lettuce
Directions: Shred chicken meat.
Heat the salsa in a skillet over medium heat.
Add the chicken and heat until mixture is warm.
Fill the tortilla shells with the chicken.
Serve with the cheese, Greek yogurt, avocado and romaine lettuce. Add red onions if you like. Enjoy!
