How to cook crispy pork crackling

Ingredients:

Pork rind 2 tablespoons olive oil 1-2 tablespoons salt

Step 1

Preheat oven to 220C. Make sure your piece of pork rind has a healthy layer of fat. Place the rind, fat side down onto a clean chopping board. Using a sharp knife, make small shallow cuts along the rind, in a criss cross pattern. Be careful not to cut all the way through the rind, to the fat.

Step 2

Drizzle rind with 2 tablespoons of olive oil and season very well with 1 - 2 tablespoons of salt. Using your fingers, rub the salt into the cuts on the rind.

Step 3

Place crackling, rind side up onto a rack in a deep roasting tray and bake for 40 to 50 minutes until the rind is crisp and golden brown and bubbles have appeared on the surface.

Step 4

Remove crackling from oven and set aside to cook for 5 minutes. Cut crackling into pieces with kitchen scissors.
