VEG-ALL CASSEROLE 1 large can Veg-All canned mixed vegetables, drained 1 large jar of cheez-wiz 1 stack (1 wax paper tube) of Ritz Crackers, crushed 2 sticks butter 1 large onion, diced 1 teaspoon vegetable oil salt and pepper, to taste
Preheat oven to 350°F. Butter a small casserole dish. In a large mixing bowl, combine Veg-all and melted Cheez-Wiz with one stick of melted butter; mix thoroughly.
Sauté onion in vegetable oil in a pan or skillet until translucent.
Using a rolling pin or the back of a spoon, crush the crackers until they resemble coarse crumbs (this can be done carefully while the crackers are still in the wax wrapping - otherwise, if the package is open, crush crackers in a plastic bag using a rolling pin).
Mix the stack of Ritz Crackers with one stick of melted (1/4 lb) butter, combining thoroughly; let it sit for 5 minutes.
Combine Veg-All mixture and onion (mix well), then sprinkle with salt and pepper to taste. Placing mixture in buttered casserole dish. Place Ritz Cracker and butter mixture on top and bake at 350°F for 35 minutes or until top is golden brown.
Note: Frozen vegetables may be substituted for the canned. Makes 5-7 servings.
