Bistro Mashed Potatoes

INGREDIENTS
3 lb. Yukon gold potatoes 1½ tsp. salt 1 c. whole milk 4 tbsp. butter or margarine
DIRECTIONS
In 4-quart saucepan, place potatoes, 1 teaspoon salt, and enough water to cover; heat to boiling over high heat. Reduce heat to low; cover and simmer about 10 minutes or until potatoes are fork-tender. Drain. Meanwhile, in 1-quart saucepan, heat milk, margarine, and remaining 1/2 teaspoon salt over medium-low heat just until margarine melts. Return potatoes to 4-quart saucepan. With potato masher, mash potatoes until almost smooth. Add milk mixture and continue to mash until well blended. Reheat over low heat.
