Kung Fu Panda Noodle Soup by Jamie @ Love Bakes Good Cakes Prep Time: 10 minutes Cook Time: 20 minutes Yield: 4 servings
Ingredients For the meatballs: 1 lb. ground pork ½ tsp. sesame oil ½ cup plain, dry breadcrumbs ¼ tsp. ground ginger 1 egg, slightly beaten 2 cloves garlic, minced For the soup: 1 carton (32 oz.) chicken stock ¼ tsp. ground ginger 1 pkg. (16 oz.) chow mein noodles 1 bunch broccolini, trimmed and steamed until tender-crisp 4 green onions, sliced Red pepper flakes, optional
Instructions
1. Preheat oven to 375°F. Spray a baking sheet with cooking spray and set aside.
2. In a large bowl, combine all of the meatball ingredients until well mixed. Shape into 1-1½-inch balls. Place the meatball on the prepared baking sheet and cook for 18-20 minutes or until the meat is no longer pink.
3. Meanwhile, bring chicken stock and ground ginger to a boil in a large stock pot. Add the chow mein noodles and cook according to package directions.
4. Once the noodles are cooked, divide the noodles and broth between 4 bowls. Next, divide the meatballs, broccolini and green onions between the bowls.
5. Top individual portions with red pepper flakes, if desired.
