SALMON MEATBALLS - 1975

Line baking sheet with parchment and coat with cooking spray. In bowl, mix 2 cans (6 oz each) boneless, skinless salmon, drained; ½ cup cooked quinoa; ½ red bell pepper, minced; ½ red onion, minced; 2 lg eggs; 3 Tbsp chopped parsley; 1 clove garlic, minced; and ¾ tsp each kosher salt and black pepper. Form mixture into 2" balls (makes about 20) and place on baking sheet. Bake at 400°F until cooked through and set, 15 to 18 minutes. Serve with warm marinara sauce.
